Monitoring linux server disk space
What's the best way to go about monitoring disk space on my linux based servers via Xymon ?

Put the default client on it. It will automatically do that. The warnings by default are 90% and 95% full for yellow and red respectively.

Install the standard Xymon linux client on your server and point it to your Xymon server. Disk space is monitored in the default configuration.
