To follow the SMTP protocol, I believe you need to add a "data" command after your "rcpt to", then you can enter the "subject:" line (and any other headers), followed by a blank line, then the body of the message.
I think postfix is complaining that it doesn't know what the "SUBJECT: xxx" command is...
