Tricky. You can of course just copy your entire Hobbit setup over to one of the servers you have in Angers, but unless you can assign the IP-address of the Paris server to the one in Angers, you would have to modify all of the clients to send data to the Angers server instead of the Paris server.
If moving the IP-address is possible, then it shouldn't be much trouble to just copy all of the Hobbit installation over and starting it up on the Angers server.
